I’ve broken down Phase 1 of the South Beach Diet into simple rules to make it easy to eat out or change the menu to suit your taste. See chart below:

| V8 Juice Coffee (decaff) 2 eggs, any style add reduced fat cheese, mushrooms, salsa, or other veggies to your eggs to make an omelette |
Big Salad 4-6 ounces chicken, fish, cottage cheese in the salad lots of low glycemic vegetables 2 Tbsp low carb dressing. |
4-6 ounces chicken, fish or lean beef Salad Low gylcemic vegetables sugar free jello or Ricotta Creme for dessert |
| Two snacks per day, examples include:
Vegetables with hummus or low fat cream cheese. |
